FEM’s new Alto-Shaam CT PROformance combi oven range reaches a new standard of cooking performance

New Alto-Shaam PROformance combi from FEMCombi ovens offer an all-in-one cooking solution, combining multiple cooking functions in a single appliance. Now Foodservice Equipment Marketing (FEM) has launched the new Alto-Shaam CT PROformance range of combi ovens.

FEM’s PROformance combi ovens offer new levels of efficiency and consistency.  They enable users to execute every menu, from basic to complex, with flawless precision and consistency – and faster, too. The multifunctional combi ovens save kitchen space by combining the functions of convection ovens, kettles, steamers, fryers, smokers and dehydrators in one unit.

The simple, one-touch PROtouch control allows operators to accurately set the temperature, humidity and fan speed in order to achieve the desired results. For example, meat joints can be roasted with the right levels of heat and humidity to ensure the meat is tender and succulent, but the skin is crisp and golden. Cooking temperature, time and probe temperature set points for popular recipes can be pre-programmed for consistent replication.

A PROpower mode delivers an instant ‘turbo’ boost of heat to speed-up production times. This enables the PROformance combi ovens to cook 20% faster than standard combi ovens and 80% faster than conventional cooking methods. It also provides rapid temperature recovery after the door has been opened.

Three power levels allow the user to have increased control over cooking times and food quality. The expanded temperature range of up to 302°C, shortens preheat times and recovery between loads, enabling the chefs to increase production by 60%. As well as being time-efficient EcoSmart technology saves 40% of energy compared to conventional cooking methods and uses 80% less water.

The ‘zero clearance design’ enables the combi ovens to be positioned where required, next to any piece of equipment, saving valuable floor space and preventing heat transfer. The variety of sizes and configurations means they are ideal for cafes or delis as well as larger restaurants and banqueting facilities.

The PROformance ovens have innovative safety features, such as a SafeVent, which automatically ventilates the oven cavity after cooking to prevent scolding, and a CoolTouch3 safety door with triple-pane glass to maintain the cooking cavity temperature, whilst keeping the door cool to touch. The illuminated LED door handle provides visual notification of the oven cooking status. The range also features a USB-based, downloadable HACCP system which records all cooking activities.

An optional combi smoke feature allows chefs to use the combi as a smoker oven. For kitchens where space is at a premium the ovens are available with retractable door recesses to keep the door out of the way when open. Other optional extras are the automatic grease collection system for the safe extraction and disposal of hot grease, and the CombiHood PLUS, completely self-contained, vent-less hood.

The PROformance 20 grid combi ovens are compatible with Alto-Shaam’s CombiMate companion warmers. The warmers hold plates and pans and are easily rolled directly into the cavity of the combi oven. Together they make a complete banqueting solution. Once the food is cooked in the PROformance combi, it can be held in the CombiMate warmers ready for service.

The list price of the Alto-Shaam’s PROformance combi starts from £9,170.00 for the CTP6-10E model. CombiMate companion warmers have a list price of £7,020.00.
