FEM has introduced new Pujadas Inox charcoal ovens
To satisfy the growing trend for charcoal cooking FEM (Foodservice Equipment Marketing) has introduced the new Pujadas Inox stainless steel charcoal ovens. Suitable for indoor or outdoor use, these new ovens have been designed to enhance flavour with their improved internal air circulation, even distribution of heat and more efficient burning of the charcoal.
Charcoal cooking is popular because of its distinctive flavour, which comes about when the food juices permeate the hot charcoal to produce aromatic particles that envelope the food in flavoursome smoke. Ovens using charcoal as fuel are proving popular for meats, seafood, vegetables and pizza but now more adventurous chefs have expanded to other food items including desserts and pastries.
The oven temperature of the Inox charcoal ovens is controlled by regulating the flow of air entering the oven to achieve a working temperature range of between 250 and 350°C. Made of premium steel, they are coated with insulating materials to minimise charcoal usage and optimise heat retention. A sunken charcoal hopper makes the most of the oven space while a higher lid height allows for several grill shelves so more items can be cooked. The durable stainless steel options are suitable for both indoor and outdoor operations.
The Inox stainless steel charcoal ovens are available in three sizes with a capacity of 30kg, 70kg or 100kg measuring 620 x 700 x 555mm, 720 x 700 x 655mm and 880 x 900 x 840mm respectively. There is an internal spark arrester for added security during operation.
All Pujadas charcoal ovens must be fitted with the hat filter, external cutter flame and airflow regulator if they are not going to be extracted via a dedicated exhaust pipe. The charcoal oven chimney system plus a wide range of accessories including stands, tables, trays and oven racks are also available from FEM.
