Taylor UK brings acclaimed range of charcoal ovens to the UK
Taylor UK is now supplying Josper’s range of specialist solid fuel cooking appliances in the UK, including the HJX line of charcoal broiler ovens.
With the popularity of flame cooked food remaining strong, many businesses are looking for ways to add it to their menu. This can be difficult as the smoke generated by these cooking processes needs to be contained and removed. While some locations with exterior space might be able to offer barbecue during the summer months, this can be less appealing in the autumn and winter. Josper’s HJX range allows chefs to deliver that authentic smokey flame cooked taste throughout the year, with a filtration flue that allows it to be positioned underneath an extraction hood and sited indoors.
The HJX range combines oven and grill in one unit. The cooking chamber is fully enclosed, with smoke exhaust passing through a specially designed flue that filters particulate matter and cools the smoke down before it is released into the kitchen’s ventilation system. The cooking chamber is separated from the exterior of the oven by a cavity. Vents draw in air from below and help to keep the appliance safe to touch as well as helping to keep the temperature in the kitchen down.
Grill racks in the oven can be put in different positions, allowing for different foods to be cooked simultaneously. Robustly constructed from stainless steel, the HJX range is simple to clean and can be supplied with a selection of door colours allowing it to be matched to existing décor, making it ideal for use in public facing theatre kitchens.
The HJX is available in a range of sizes. The HJX-20 is a compact countertop unit that has an average of 25kg per hour production capacity with a daily charcoal consumption of between 6 to 8KG.
The HJX-25 has an output of 60kg per hour and uses 10-12kg of charcoal a day. For larger locations, the HJX-45 has a maximum output of 90kg an hour at 12-16kg while the largest in the range, the HJX-50 can handle and average of 110kg an hour while requiring 16-20kg of charcoal.
