Speed, quality, ease of use, fewer breakages: Winterhalter UC wins praise at José Pizarro Broadgate

Winterhalter glasswasher at José Pizarro BroadgateThe latest José Pizarro restaurant is in the new Broadgate Circle development, just behind Liverpool Street station.  It serves lively, seasonal and contemporary twists on Spanish classics and, as with all José’s restaurants, it offers a relaxed, buzzy, atmosphere with the real flavour of Spain.   “The food here is like nothing customers have tasted before,” says José.  “I’ve drawn on my years of experience and added some surprising new ideas on top.” 

The 14,000 square feet site has 65 covers, including an outside terrace for year-round dining, and is open all day.  The emphasis is on chic, simple quality – for example, glassware from Glass & Co., crockery from Churchill’s premium range and glass, copper and brass tables by Cada Designs.

Such a busy site with high quality tableware puts pressure on the warewashers.  The group already had Winterhalter PT passthrough dishwashers in its other restaurants.  Having been impressed with their results, for the new Broadgate venture José decided to switch to Winterhalter glasswashers, too.

“We’re pleased with the decision, because the Winterhalter’s results are very different from its predecessor’s,” says José.  “Our wine and champagne glasses are nice and sleek.  They need a powerful, good quality machine.  All we have to do is rinse off any heavy dirt or stains then put the glasses into the Winterhalter.  It’s fast and gives really good results.”

Another plus is the Winterhalter’s simple controls.  “It’s easy to operate – and the explanatory screen is really helpful.”

The José Pizarro Broadgate restaurant has a medium-sized UC undercounter glasswasher, fitted with a Winterhalter reverse osmosis (RO) water treatment system, all of which was installed by catering specialist Salix.  “The RO makes a big difference,” says José.  “I’ve no doubt it has improved the level of cleanliness.  It has also reduced the polishing times and effort required – making a significant time-saving.  This in turn has led to a reduction in breakages when polishing.  That’s an important factor, especially when handling premium glassware.”

When it comes to sustainability in catering equipment, José says, “We look for cost-effective solutions but we also want our staff to have confidence in us, that we are sourcing good quality, reliable and practical appliances.  If the equipment is also environment-friendly, so much the better.”

On a typical evening the restaurant will need 1,200 to 1,300 glasses, within a few hours.  “The pace at which we work, and the volume, means the machine is in constant use.  Its speed is one of the key factors; we are using the quickest programme as we need to go through many wash cycles in a short period of time.   The Winterhalter gets a real thumbs up!”

The UC Series of undercounter machines comes in four sizes.  The unit at José Pizarro Broadgate is a UC-M (medium), measuring 725mm high by 600mm wide and 637mm deep.  It is designed to accommodate 500mm x 500mm racks.  It is capable of processing up to 77 racks per hour on the short wash programme, using 2.4 litres of water per cycle.

The VarioPower washing system uses a special design of elliptical wash arms that create a ‘wash-field’ of cleaning power and delivers the best possible results.  VarioPower also allows the user to adjust the power and pressure to take account of how delicate or dirty the glasses are.  Each machine can be tailored to the conditions on-site, a process carried out by the installation engineer, so that it works to optimum efficiency for the local conditions of, for example, water hardness.

The simple controls feature a single start button, which changes colour to indicate the progress of the wash cycle, and a touchscreen with simple, clear symbols and animations that everyone can understand.  Thus to set a UC glasswasher to clean delicate wine glasses, the operator simply touches the wine glass symbol and pushes the start button.

The restaurant’s reverse osmosis system is Winterhalter’s RoMatik XS (eXtra Small).  It combines all the benefits of a full-size system with low running costs and long service intervals.  The mini-system measures just 469mm (h) x 142mm (w) x 515mm (d), so is easily small enough to fit beside or even on top of the warewasher.  Yet it can process up to 90 litres of water per hour, removing 98% of particles.  It also generates a reliably high yield of osmosis water, keeping the amount of waste water to a minimum, ensuring low operating costs and thus helping to conserve resources.
