Cook the chopped spring onions and celery for two minutes, until soft, and then stir in flour and fish stock, juice from the cooked fish, milk, white wine and chopped parsley. Cook for three minutes to thicken, stirring every minute.

Combine the fish and sauce in a microwaveable dish, top with the potato and grated cheese, and cooked for a final three minutes. The finished dish can be placed briefly under the grill for a crisp brown top.
