Fait Maison group selects Rational SelfCookingCenter whitefficiency combi steamers

Fait Maison is a growing bakery and restaurant chain, based in London and offering a menu mixing classic French with Mediterranean cuisine.  It features two brands: Fait Maison, which offers bakery, restaurant and event catering, and Blanche Eatery, for take away, deli and lunch catering.  What all the outlets have in common is an emphasis on natural, healthy, freshly-made food.  To help them maintain that quality they have just invested in new SelfCookingCenter whitefficiency combi steamers from Rational.

“Throughout the group we are serving up to two thousand customers a day,” says managing director Mohamed Osman.  “They know our ethos: we make things from scratch, we don’t cut corners.  To keep up our reputation we only want the best – not only in terms of ingredients, but also in terms of quality of production.  Rational is the Rolls Royce of cooking equipment, it’s the number one.” 

The group also promotes healthy eating: “No fry ups, no saturated fat, no junk!” says Mohamed Osman.  The Rationals help here, too.  “Combi steaming is the best way to preserve the food’s natural goodness and nutrients.”

The Rationals are used for a wide range of products, from scones, pastries and pies to steaks and roasts.  The group’s customers expect the same high standard of food, whichever site they use, so consistency is vital.  “The new Rational is brilliant at cooking everything to the same quality, whether it’s salmon steaks or croissants.”  This is thanks to a new feature called HiDensityControl, which ensures absolute consistency of cooking, throughout the cabinet, from the top shelf to the bottom.

With croissants, Fait Maison has found the SelfCookingCenter whitefficiency not only bakes them to perfection, light, fluffy and crisp, but also saves about 10% in ingredients.  “The croissants come out about 20% bigger from the Rational than from our old ovens,” says Mohamed Osman.  “So not only are they better, but we also need less dough per portion.”

Another saving comes from a reduction in energy consumption.  “Sustainability is part of our business ethos – for example, we source ethical and local ingredients wherever possible.  The fact that these new Rational units use less energy, and are thus more environmentally sustainable, is a major factor.”  In fact, the SelfCookingCenter whitefficiency can reduce energy consumption by up to 20%, compared to previous models, and up to 70% compared to conventional cooking equipment.

“I’ve bought a lot of catering equipment over the years,” says Mohamed Osman.  “I know that a Rational is a wise investment.  It gives us efficiency, consistency and savings.”

Rational at Fait Maison

The SelfCookingCenter whitefficiency units at Fait Maison are 20 grid floor-standing units, typically used in kitchens preparing 150 to 300 meals per day.  They are available in electric and gas versions, accommodate twenty 1/1 GN containers and measure 879mm wide by 791mm deep by 1,782mm high.  Key features include:

  • HiDensityControl features patented dynamic air mixing technology, which precisely controls the speed of the unit’s fan to channel the heat and humidity to exactly where it is needed.  This not only delivers outstanding cooking quality, but also allows chefs to maximise output, since they can load more food into the same size cooking cabinet.  It also reduces energy consumption and cuts production time compared to previous models.
  • Efficient LevelControl tells the user which different foods can be cooked together at the same time and intelligently controls the cooking time for each rack.  It means that everything is cooked to perfection, every time.
  • SelfCooking Control regulates the cooking processes – even the most complex of cooking routines can be initiated at the touch of a button, thanks to the simple control system. However, numerous new cooking options mean that chefs can adjust the cooking process according to their own recipes.   They always know exactly what’s going on, since they can see the status of the cooking process via the control panel.  This means no more time-consuming routine tasks, such as monitoring food, and more time for essentials such as creativity.
  • CareControl further enhances efficiency by detecting the level of soiling in the SelfCookingCenter and always suggesting the appropriate cleaning level. This saves up to 40% in terms of energy, water and chemicals.
