Most staff canteens rely on hot food counters to speed up service and offer a range of main dishes and vegetable accompaniments over a busy, and often long, serving period. One problem with this is that if the counter is filled in advance, the quality of the food suffers as time goes on.

Rational’s new SelfCookingCenter whitefficiency can prepare a substantial range of items for a hot food counter in just 60 minutes and keep it stocked with fresh food as required. This is made possible by using EfficientLevel Control® (ELC), which cooks many different foods at the same time, and by the automatic overnight cooking process, which doesn’t need any input from the chef once set up.
ELC ensures the best cooking results no matter who is doing the cooking. It’s very easy to use: simply load up racks in the SelfCookingCenter whitefficiency and select what is being cooked and how it should be cooked. ELC does the rest, calculating when each rack will be done and even indicating what items can be cooked together. For example, different pan-fried dishes, such as breaded food, pan fries, deep-fried foods, croquettes, grilled vegetables, along with pizza and other bakery products can all be cooked at the same time.
The automatic overnight cooking process cuts costs as it not only makes use of cheap-rate electricity, but also reduces staffing requirements and increases production capacity. A wide range of roasts can be gently cooked overnight in a single load so they are ready, tender and succulent, in the morning. All staff have to do is remove the meat or crisp up the joints as required and, just 15 minutes later, the SelfCooking Center whitefficiency is free to cook other dishes.
Using the SelfCookingCenter whitefficiency substantially improves the quality of food in the hot food counter. ELC and shorter production times means that the hot food counter can be stocked on a rolling basis, so that food is fresher and tastier as it is not hanging around waiting to be served. And if there is a sudden rush then the unit can cook up extra items really quickly – depending on the model, it can roast up to 50 fresh chickens, perfectly, in just 30 minutes.
What’s more, there’s no time-consuming oven cleaning at the end of the cooking session, as the SelfCookingCenter automatically cleans itself. All staff have to do is pop in a couple of cleaning tabs, when the unit instructs them to do so, and the unit’s CareControl cleaning system does the rest.
