Foodservice Equipment Marketing has introduced Alto-Shaam cook and hold smoker ovens
Diners love the wood-smoked flavour of barbequed food but this type of cooking is not practical in the winter months. To cope with year round demand Foodservice Equipment Marketing has introduced new Alto-Shaam smoker ovens which offer all the convenience of cook and hold ovens with the added feature of being able to flavour menu items with real smoke.
The ovens use pure woodchips for authentic flavouring so chefs don’t need to add extra artificial ingredients to get the depth of taste they require. The smoking process itself induces a natural enzyme action in meat which makes it especially tender and flavoursome.
The smoker ovens are available in both manual and electronic versions in single or double units. Capacities are up to 45 kg and 90 kg of product respectively. Both models can cook, hot smoke and hold meats, poultry and fish as well as being able to cold smoke fish and cheese. They are designed cut costs, using less energy than conventional ovens. The electronic models use the SureTemp heat recovery system for further savings.
All models have a non-magnetic stainless steel interior, racks and shelves and are stackable for additional capacity. Electronic models have a temperature probe to control the cooking in addition to eight programmable menu options. They are mounted on castors and are supplied with internal drip pans, shelves and rib racks, an external drip tray and a sample bag of woodchips.
The woodchips are available from FEM in 9kg packs. There are four different types of wood – apple, cherry, hickory and maple to suit the type of food being cooked.
