Moffat’s Chillogen trolley can provide extra storage for Christmas catering
In the run up to Christmas managers are constantly on the lookout for a ways to streamline operations and up capacity. The increased business at Christmas time offers a chance for a real boost to turnover but careful planning is needed to maximise profits.
A common complaint heard over the Christmas period is the lack of space in the kitchen area. As more meals are prepared and plated up, there is increased pressure on storage. If adequate facilities can’t be found then managers run the risk of creating bottlenecks and suffering the consequences of sub-standard service.
E & R Moffat’s Chillogen banqueting trolley can act as a mobile kitchen storage extension when space gets tight. The Chillogen trolley rapid chills, holds and regenerates cooked food – fully automatically and all in the same compartment. A single Chillogen unit can hold up to 90 ten-inch plates (with covers) on 15 shelves.
Once it is loaded the Chillogen trolley can be pushed into any area to store the food until it is needed. Effectively it’s an extra fridge that can be left in a passageway, an alcove or even an empty office! The Chillogen just requires a couple of standard 13Amp sockets for power. This makes it possible to cater for banquets and functions from a relatively small kitchen.
“Its multi-functionality adds greatly to its versatility,” says Gary Allen of Moffat. “It can be a rapid-chiller, a fridge or a regen oven depending on what is required at the time, and it can also be moved to wherever it needs to be for storage or serving.”
