Most people think of a banqueting trolley as a simple hot cupboard on wheels but E & R Moffat’s Chillogen banqueting trolley has raised the status of banqueting trolleys to another level – or four. The Chillogen trolley can switch functions between a quick chiller, a refrigerator, a re-gen oven and a hot cupboard instantly and all fully automatically.
For banqueting operations, once cooked food is plated up it is loaded straight into the Chillogen trolley where it stays until it is time for it to be served directly to the table. The plated food is quick chilled, stored, regenerated at a preset time, and held at the correct temperature, all in the same Chillogen trolley compartment.
There is no need to transfer food – just load up the Chillogen trolley and set the regen time, Chillogen does the rest, cutting out all handling processes between chill and serve. The trolley is fully mobile and can be pushed right into the serving area, minimizing the distance the food has to travel from serving point to table.
The Chillogen trolley isn’t limited to banqueting use alone. Any one of its component functions can be used independently to act as an extra rapid chiller, refrigerator, regen oven or hot cupboard in times when kitchen capacity is overstretched.
The Chillogen Banquet Trolley is available in two models, making it possible for a single unit to cater for events with up to 60 or 90 covers using 10” plates. The trolleys can run off standard 13Amp sockets.
