Slicers need to stay sharp, reliable, safe and hygienic throughout their working life. They have the potential to cause very serious problems for the operator if they are not up to standard in any area.
Apuro, distributor for some of the biggest equipment brands in the UK hospitality market, has selected the new Canova 300 slicer from Ital to be the latest addition to its food prep range because of its safety features, robustness and ease of cleaning.
The Canova has a built-in sharpening tool, so the blade remains razor-sharp and cuts cleanly through meats from wafer-thin 1mm slices to chunky 20mm thick pieces. The blade itself can be removed with a standard tool for cleaning and inspection.
The support cover for the thickness gauge plate is also removable, allowing the machine to be kept spotlessly clean at all times. There are no visible screws or awkward corners on the rounded casing, so it can be easily wiped clean and does not trap food particles.
For safety, operation is via stainless steel push buttons protected to IP67 and the 210 Watt motor is sited 41mm from the cutting blade. Vulcanised rubber stops on the carriage prevent overshoot, while aluminium telescopic feet with rubber bases hold the cutter steady during operation.
To prolong the life of the machine and minimise maintenance the Canova 300 features self-lubricating slide rod bushings and an enclosed and sealed belt pulley. A maintenance tool kit is supplied to encourage and simplify routine maintenance.
